Make Me a Summer Salad, but Better!

While it's been fun to eat my way through Maine, I'm looking forward to eating at home again. I'm just a creature of habit, I guess.

I love loaded salads, you know, the ones with lots of fixings on top.

Mexican Pizza Crackers, Anyone?

I finally found the new Crunchmaster Mexican Street Corn crackers at my local Safeway and decided to have a little fun in the kitchen. The result? These tasty Air Fryer Mexican Pizza Crackers. 🤩

To make 'em, top the seasoned crackers with a layer of refried beans, a dollop of salsa, a sprinkle of cheese, and a slice of fresh jalapeño.

Summer Snacking

My Bubu made the best pickles. She has since passed away, but her legacy lives on. The end of July and early August is when I will make my pickles for the year - more on that later.
