🚨 Nima Is Back | Trader Joe’s Hidden Gluten Test | Why Is Everyone Cutting Out Dairy?

Hello Reader,

A lot has been happening in gluten-free land lately — and I’ve got some important updates for you. Let’s talk about Nima’s comeback, food intolerances beyond gluten, and a few exclusive deals you don’t want to miss.

Nima is Back in Business (Yes, Really!)

As many of you know, I stopped recommending Nima a few years ago — even after championing it from the beginning.

Why? They couldn’t reliably supply test capsules (rendering the device useless), the company was poorly managed, and they ghosted the gluten-free community.

Late last year, Nima told me they were relaunching in 2026 with new leadership, improved technology, new validation studies, and a renewed commitment to the community. They sent me their new device to try.

I’ve been using it for several weeks now. It performs beautifully, and I break down exactly what’s different in my new article on the blog today.

Oh the Irony

OK, friends, here's the ironic part I couldn’t help but laugh at: Nima just had its accuracy independently validated by the same lab the Gluten Free Watchdog uses, confirming 99% accuracy down to 10 ppm. If you know the history between those two… you’ll understand how this is ironic.

Nima can be an incredibly helpful tool when something feels “too good to be true" or isn't clearly labeled gluten-free, like this new product from Trader Joe's that I tested over the weekend. It's not labeled gluten-free, but doesn't appear to contain any gluten ingredients.

That said, I personally use Nima more selectively now for three reasons:

  • Testing food at restaurants can be stressful and uncomfortable when results come back positive
  • Nima detects gluten below the FDA’s 20 ppm “gluten-free” threshold, which can flag products that are technically considered gluten-free (for example, a product with 12 ppm would be safe for most people but still trigger a positive result)
  • Capsules are expensive (and more than ever!), so they're best saved for higher-risk situations

I explain all of this in more detail in my FULL ARTICLE.

One fun thing: Nima sent me extra test capsules, and I want to use them to test the things you care about most. Send me your suggestions.

Unpacking Food Intolerances Beyond Gluten

Gluten Free Unwrapped is back for Season 2, and I'm introducing a new format this season. I’ll be unwrapping hot topics from gluten-free land to learn more, explore trends, and try to make sense of this gluten-free lifestyle.

This week, I sat down with Molly Winsten, our resident registered dietitian at Love Me Gluten Free, to answer the question: Why does it feel like everyone is eliminating so many foods these days? And not just gluten — but dairy, eggs, nuts, oats, and more.

I asked Molly how to tell if you might have a food intolerance beyond gluten, whether someone can lose tolerance to foods like dairy after long-term elimination (and is this doing more harm than good?), and why so many people in our community seem stuck on permanent elimination diets.

We dive into it all — and Molly breaks it down in a way that actually makes sense to me.
