Hello Reader, I just spent the last few days at a food show called Newtopia Now. As usual, I was on the hunt for new products and brands to share with you. 👀 Please look at my latest Instagram post. Here's a sneak peek at two of my favs finds: How Much Gluten Does It Take to Trigger Celiac Disease?We talk a lot about crumbs and cross-contact, but how much gluten does it take to trigger an immune response in someone with celiac disease? A new study this month in Gastroenterology put that question to the test. Researchers gave 51 adults with biopsy-confirmed celiac disease small doses of gluten, from 1 mg to 1,000 mg, and measured their immune response. Here's what they found:
The pattern wasn't perfectly linear (a couple of mid-range doses didn't fit the trend), highlighting just how much individual sensitivity can vary. But here's what caught my attention: even very small amounts of gluten triggered a measurable immune response in some people. For context, one of the landmark studies that helped inform the FDA's 20 ppm gluten-free standard found that 10 mg of gluten per day for 90 days did not cause significant intestinal changes overall, while 50 mg per day did. [You can learn more about how the FDA set the 20 ppm limit in this article.] So, does this new study mean the U.S. 20 ppm "gluten-free" standard is suddenly unsafe? Not necessarily. This was a small study measuring an immediate immune response after a single exposure, not long-term intestinal damage. 🩷 Life UpdateNext week, I'm taking my daughter to college, and she's going across-the-country far. My son is also heading back to school for his senior year.
