Couscous has been one of those foods missing from my gluten-free diet.

Traditional couscous is made from wheat, so it has never been safe for people with celiac disease or gluten sensitivity.

What if food labels clearly identified every gluten-containing grain, not just wheat, but also barley and rye? Sounds dreamy, right?
