šŸ© Testing Donuts for Hidden Gluten | 🄄 I Don't Like Coconuts, but...

Hello Reader,

It's the first day of spring, and I've got a new Nima test, fun recipes, new product finds (and discounts), and more. Let's get to it!

Testing Drumroll Donuts šŸ©

I think I’m losing my mind. I saw a celiac creator post about Drumroll donuts, saying they contain oats, but when I checked the ingredient list. There are no oats.

Regardless, I thought, let's go ahead and test them with my Nima, just to put everyone's mind at ease.

As you know, I have a bit of a love-hate relationship with Nima (you can read more in my article, What You Need to Know About Nima Before You Buy).

While I love that it gives me a way to check for hidden gluten in everyday products/foods, the test capsules are pricey, and Nima can be overly sensitive, misidentifying a legally GF product as containing gluten.

Nima is offering the GFYGF community 15% off with the code GOODFORYOUGLUTENFREE. Be sure to read my article before you buy - I share all the pros and cons so you can decide if it's right for you.

Spring Snack Board 🌼

Did you know that Crunchmaster just launched a new fun flavor: Ranch! I happen to think this important occasion calls for a spring snack board! šŸ˜‰

Here are the details:

  • The flower petals are sliced bell pepper strips.
  • The dip is a store-bought spinach-artichoke dip topped with a grape tomato.
  • The snap peas complete the stem.
  • The Ranch Crunchmaster Crackers surround the flower for easy scooping and dipping.

I Don't Even Like Coconut... but These? 🄄

We featured crispy coconut rolls from Thai Coco in our March box, and I was surprised by how much I liked them. I don't normally love coconut, but I really enjoyed these. They're light and crunchy, like a delicate rolled wafer cookie.

Find them on Amazon or at most Albertson's nationwide. Check the company's store locator and get ready to be surprised by what coconut can do!

PS: Check out Mango, Chocolate, Banana, and Thai Chili flavors.

New Breakfast Recipe šŸŒ¶ļø

I included Mr Bing's mild chili crisp sauce in the March box, and so many of you have asked me what to do with it. You can put it on anything - fish, chicken, rice, veggies, sushi, avocado toast, and more. I personally love it on top of eggs.

I created this beautiful Hot Honey Scallion Pancake on Instagram to give you a little inspiration.

And remember, most chili crisp sauces contain gluten; however, Mr Bing is gluten-free.

Meet Cookbook Author & Blogger, Nicole Hunn

This week on Gluten-Free Unwrapped, I interviewed Nicole Hunn, the brilliant recipe developer behind Gluten Free on a Shoestring.

Chances are you’ve made one of her recipes (including her ever-popular bread recipe), or you have one of her cookbooks. Nicole has a deep understanding of how gluten-free baking actually works, which flours work with what recipe, and how to achieve the best results every time.

She’s also been doing this longer than most. Long before 1:1 gluten-free flours existed, Nicole was a mom on a mission, developing recipes from scratch and desperately trying to help her son feel normal.

In this episode, we talk about how she got started, how her blog has evolved and endured over the years with Google algorithm changes and AI, and what’s next, including a new cookbook and flour blend!

This is a rare, behind-the-scenes conversation with one of the most private creators in our space. Listen wherever you get your podcasts or on my blog.

Did You Know...

Celiac Cruise announced its 2027 sailing lineup this week.

Love Me Gluten Free is celebrating its second birthday next month with an extra-special "birthday"-themed box. Use the code HAPPYBDAYLMGF for 20% off your first box for new monthly subscribers (GF and GF+DF options available).

Yes Bar makes an outstanding chewy cookie bar that is low in sugar, vegan, and paleo. It's been my mid-day snack for several days in a row! While it comes in Dark Chocolate Chip, Strawberry Coconut, and Salted Maple Pecan, the Apple Cinnamon Crisp is a favorite here - it smells so good.

Shop for Yes Bar on Amazon. I recommend the sampler pack so you can try all six flavors.

Have a great weekend, friends!

Sincerely,

Jenny

Hello Reader, Every time a new Love Me Gluten Free box goes out into the world, I get a little nervous. It’s such a strange feeling. On the one hand, I’m so proud of what I’ve created and curated… and on the other, it feels like I’m putting a piece of myself out there, wondering what everyone will think. If you’ve ever created something and shared it publicly, you probably know exactly what I mean. That said… this May box? She’s a keeper!! I leaned more savory this month after last month’s...

I just want to make sure I'm reaching you each week, and those spam filters are brutal on sincere creators like me. Let's get into this week's content: The Trader Joe Myth that Just Won't Go Away The myth that Trader Joe's gluten-free...

Hello Reader, I do my best to keep you informed on all things gluten-free… but sometimes what I have to share just plain sucks. This is one of those times. As of April 2026, Mars has updated several M&M’s products in New Zealand—including Peanut, Milk Chocolate, and Minis—to include gluten-containing ingredients (specifically barley malt extract). They’re working to spread the word, even sponsoring a post with @coeliacnewzealand to notify the community (more like… alarm everyone). For now,...
