A Pasta to Remember

Jovial has been a trusted staple in the gluten-free community for years, known for great-tasting pasta. A few months ago, Jovial introduced two new pasta shapes: Bucatini and Orzo.

What is bucatini? It’s a thick spaghetti-like noodle with a hollow center, perfect for soaking up sauce and offering a satisfying “bite.”

I tossed it with a jarred marinara and served it with baked chicken and roasted broccoli for an easy, delicious weeknight dinner. The texture really stood out; it's chewy in the best way.

What is orzo? Orzo is a small, rice-shaped pasta. I wanted to try it, so I created a simple recipe using orzo, chicken breasts, and frozen peas and carrots —a deconstructed chicken pot pie of sorts. Here’s how I made it:

  • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  • Add a chopped onion and cook until softened; then add fresh, minced garlic and cook for 1 minute.
  • Add 2 lbs of diced chicken breasts (uncooked), and season the mixture with S&P and thyme. Cook until the chicken is mostly cooked through.
  • Add 1 cup of Jovial's gluten-free orzo, 2-3 cups of frozen peas and carrots, and 3-4 cups of chicken broth. (I started with three cups of broth, but added a little extra because the orzo needed it.)
  • Cover the pan and cook for 12-15 minutes, or until the orzo is cooked through and the sauce thickens.
  • Serve it with a warm Canyon Bakehouse Sweet Brioche roll (optional) and enjoy!

Egglife Wraps

If you haven’t tried Egglife egg white wraps yet, you’re missing out! These wraps are low-calorie, low-carb, high in protein, and oh-so-versatile.

I use them to make these delicious and easy Mexican Pizzas:

  1. Spread a thin layer of refried beans (canned) onto an Egglife wrap.
  2. Top with salsa and shredded Mexican or cheddar cheese.
  3. Bake at 400°F for 10-12 minutes or until the cheese is bubbly and golden.

News from Gluten-Free Land

Play Ball! Today Show host Dylan Dreyer and her son Cal (who has celiac disease) threw out the first pitch at the very first Celiac Awareness Night at Fenway Park last week.

Omer Update: For more than a year, we shared the story of Omer Shem Tov, a young Israeli man with celiac disease who was kidnapped on October 7th and held hostage in Gaza. Omer was in the U.S. last week and told his harrowing story to this local news station.
