Can AI Predict Celiac Disease?

A friend forwarded me an article this week titled, "AI model predicts celiac disease years before diagnosis, study finds." I, of course, read it right away.

It looks like researchers are using artificial intelligence to identify patients at risk for undiagnosed celiac disease up to four years before the disease presents itself.

This tool, if validated, will transform how doctors screen for celiac and help with early detection. I welcome it, knowing that it can take years to get diagnosed with celiac disease. I do, however, have many concerns about AI.

Pizza Pizza: Pizza is the #1 Super Bowl food, and Domino's says it sells 2 million pizzas on Super Bowl Sunday alone!

Sadly, the Big Five pizza joints say they're not safe for people with celiac disease, and I'm going to take them at their word.

The next best thing is to make pizza at home. It's safer and healthier, and while not exactly the same, it will satisfy your pizza hankering as you watch the big game.

It's a frozen stone-fired pizza made with a cauliflower crust. It tastes surprisingly good! I love the texture of the crust, and I don't taste cauliflower at all. I just taste a darn good pizza!

I also love that the company was founded by a mom who has two sons with celiac. She set out to make a delicious and good-for-you pizza option for her family ... and boy did she succeed!
