Decoding Sourdough GateThis week, there was much discussion of sourdough bread and whether it's safe for people with celiac disease and gluten intolerance. It stemmed from a bakery in Ohio that advertised its sourdough bread as "gluten-friendly sourdough wheat bread." The Gluten Free Watchdog tested the "gluten-friendly sourdough wheat bread" and found it contained 140k+ ppm of gluten - wow! By comparison, regular wheat flour "only" contains 100k ppm of gluten. The truth is sourdough bread made from wheat flour is NEVER safe for people with celiac disease and gluten intolerance. However, it's a complicated topic because sourdough bread is more digestible, and some people find it easier to digest. These are not people with an issue with gluten. I'll help you understand how sourdough is made and why some people insist it's safe (even though it's not) in THIS ARTICLE. Sourdough You CAN EatThe good news is that there are several ways you can enjoy delicious sourdough bread. (1) You can order some from Bread Srsly.
