😱 Imagine 14 Years with Celiac | 🦈 GF Biz on Shark Tank | One-Pan Cheesy Tortelloni | Meet Nima's New CEO

Hello Reader,

This weekend is my 14th anniversary with celiac disease.

BC (before celiac), life was simpler. I ate anything I wanted and never bothered to read a food label.

AC (after celiac), I turned into a fervent label reader. I choose carefully what I will and won't eat. And I've learned more than I care to know about ingredients like yeast extract, maltodextrin, and natural flavors.

But the honest truth is, as much as having celiac sucks (it does), it's also not that bad.

I know I sound like a walking contradiction, but over time, I've learned how to keep myself safe and live a health-forward lifestyle.

While celiac is never easy, it does get easier with time.

And wherever you are on your journey, you should be proud of every step you take. This diet is not for the faint of heart, and those who think we "choose" this crazy lifestyle are so unbelievably misguided!

PS: A few years ago, I wrote an article titled 10 Ways Celiac Changed Me -- it might be the pep talk you need!

Featured Recipe: Cheesy Tortelloni Pasta Bake

I just made the most delicious one-pan meal using Taste Republic's Herb & Cheese Tortelloni (I bought it using the free product coupon in the April Love Me Gluten Free box).

Here's how to make it:

  • Add the tortelloni to a 9x13 casserole dish.
  • Top it with seasoned ground beef (cooked) and sliced zucchini and yellow squash.
  • Pour an entire jar of marinara sauce on top and give it a good mix.
  • Add lots of shredded mozzarella cheese on top.
  • Mix everything together and cover the dish with foil.
  • Bake for 35 minutes in a preheated 375º F oven, then bake uncovered for 10-15 minutes, until the cheese is lightly browned and bubbly.

My daughter said it tasted like "upgraded lasagna," and let me tell you, it was a million times easier than making homemade lasagna.

Tune in as we uncover the truth about:

The Big Relaunch: What’s actually changed, and why the new team had to rebuild the tech from scratch.

The Accuracy Debate: We tackle the reality of false positives, cross-contact, and how to interpret what the sensor is really telling you.

The Mental Health Toll: Does testing your food give you peace of mind, or does it cause more food anxiety?

The Future of Nima: What’s next for Nima and how they plan to win back the trust of the gluten-free community.
