Hello Reader, This weekend is my 14th anniversary with celiac disease. BC (before celiac), life was simpler. I ate anything I wanted and never bothered to read a food label. AC (after celiac), I turned into a fervent label reader. I choose carefully what I will and won't eat. And I've learned more than I care to know about ingredients like yeast extract, maltodextrin, and natural flavors. But the honest truth is, as much as having celiac sucks (it does), it's also not that bad. I know I sound like a walking contradiction, but over time, I've learned how to keep myself safe and live a health-forward lifestyle. While celiac is never easy, it does get easier with time. And wherever you are on your journey, you should be proud of every step you take. This diet is not for the faint of heart, and those who think we "choose" this crazy lifestyle are so unbelievably misguided!
