Omer is HOME ☺️ | New Gluten-Free Products Scouted For You | RIP Elana

I've been waiting 505 loooong days to say this ... Omer is home!!

Long-time subscribers know that we've been following the story of Omer Shem Tov, a young man with celiac disease and asthma who was taken hostage on October 7, 2023.

Omer, who was 21 years old at the time of his kidnapping, was released last Saturday and is now home with his family where he belongs. Our prayers have been answered!

Omer has a long road to recovery. He lost nearly 30 lbs, was not fed gluten-free food, and for the last 450 of his captivity, he was held in complete isolation.

I dare you to watch this video of his reunion with his parents without crying. After 505 days of hell, he embraced his parents and said, "How great is it that you're my parents." 😭

From the Jerusalem Post, "Shem Tov’s prolonged captivity raised concerns among his family and doctors, as it is believed he did not receive gluten-free food while in Gaza. This lack of appropriate nutrition may have exacerbated his condition, adding to the challenges of his recovery."

We wish Omer a speedy recovery and pray for the remaining hostages to be returned home to their families. It all feels so bittersweet.

(1) ZENB Ramen: ZENB ramen is made from yellow peas. I thought it would taste strange, but eating is believing, my friends. The texture and flavor are spot on! It's also high in fiber and protein!

New Bakery

A new bakery called You Won't Believe It's Gluten-Free opened in Springfield, Massachusetts, last week. I added them to my list of 300+ gluten-free bakeries you can visit throughout the US.

RIP Elana

Elana Amsterdam, the author of bestselling almond flour* and paleo cookbooks* and founder of Elana's Pantry, passed away last week.

I was starstruck when I met Elana at an influencer event in Colorado in 2018. We chatted the whole time. She was kind enough to read my book* and write an endorsement, which I published on the first page.

Elana has always struggled with celiac disease and MS, and a few years ago, she blogged about her botched double mastectomy that left her in chronic pain and her struggles with mental illness. Her family posted a tribute to her on her blog.

RIP Elana. You helped so many of us create delicious recipes at a time when few people knew what gluten-free meant. May you finally find the peace you've long desired. 😔
